Exposing oils to high heat can result in the production of oxidized compounds and free radicals that are harmful to our health.
Instead, I like to sauté in vegetable broth, which actually makes it quite tasty. Some other ingredients I've experimented with are:
Bragg Liquid Aminos
Tamari
lemon or lime juice
apple cider vinegar
rice vinegar
Tomato juice
If I don't want to add an extra flavor to whatever I am cooking, I will just add a little water to prevent the vegetables from sticking to the pan.
For baking you can replace oil and butter with:
applesauce
mashed bananas (or other fruit)
mashed potatoes
mashed pumpkin
tomato sauce
tofu
yogurt
If you don't like things to be dense, you might want to add half the amount of the oil replacement and use carbonated water instead of regular.
