1. Put a cheese cloth over a tall bowl or cup and secure it with a rubber band.

3.Let it sit over night in the fridge so that all the liquid strains through.
4. The next day, the cheese will be the stuff that is left in the cheese cloth. It will be spreadable like cream cheese and have a tart flavor. Mix it with a pinch of sea salt and serve it with crackers or spread it on toast or in sandwiches.
Options:
-Add fresh or dried herbs like basil and parsley.
-Add nutritional yeast to give it some extra flavor.
-Mix in dried cranberries or other dried fruit.
