Ingredients:
1 1/4 cups chopped fresh mushrooms
1/3 cup cashews, preferably soaked for 4-6 hours
1 clove garlic
1/4 to 3/4 cup water
1/4 teaspoon sea salt
1 Tablespoon fresh basil (or 1 teaspoon dried basil)1/2 tsp. onion powder
optional: 1 Tbsp. nutritional yeast
1/3 cup finely chopped mushrooms (do not process)
Step 1: Wash and dry your mushrooms.
Step 2: Add all of the ingredients except the water (and the second amount of finely chopped mushrooms) into your food processor or blender. Turn on the blender and slowly add the water until very smooth and then keep blending until ithe soup warms from the blender.
Step 3: Pour the warmed soup into bowls and stir in the remaining 1/3 cup chopped mushrooms.
