Soak 1 cup of dates in warm water over night to soften them. Or if you are in a hurry you can simmer them in water.
Drain out the water (but don't throw it away) and put the dates in a food processor or blender until smooth. If it is to thick you can add a little of the soaking water until you reach a desired consistency. I keep the soaking water because it is very sweet and delicious in muffin or pancake recipes to replace the water. You can also use it to cook oatmeal or other porridge.
