I used to always think about these and try to decide how I liked to give and receive love. Gift giving always seemed to be the last one on my list. Actually a lot of the time I would feel bad if someone gave me a gift. I don't know why. Maybe because I felt like I didn't need or deserve it. Or I felt guilty if I did't give them a gift back. However, I realized that some people like to express and receive their love this way and it is not about the material object, but what it symbolizes.
Homemade chocolates are a special little gift that I like to give to the people I love to show them that I was thinking about them and I am so thankful that they are in my life.
Vegan Cookies and Cream Chocolates
Ingredients:
- 1/2 cup melted raw cacao butter
- 1/4 cup cashews, soaked over night or longer
- 4 Tablespoon agave
- 2 teaspoons liquid (water will work, but coconut kefir or water kefir will boost the nutrition)
- 1/2 tsp vanilla extract
- a couple vegan chocolate cookies, crumbled or pulsed in a food processor (I used homemade, but any vegan cookie will work. You can also use cacao nibs or mini chocolate chips.)
Step 1: Blend the cashews with the water, agave, and vanilla until extremely smooth. Add cacao butter and blend until creamy.
Step 2: Stir in the cookie crumbles, cacao nibs, or whatever chocolate bits you are using. Poor into molds or an ice cube tray and let it set in the freezer for 15 minutes. The cacao butter usually holds its shape at room temperature, but I would store these in the fridge just in case.
