1 cup rice bran (or wheat/oat bran if you are not gluten free)
1/2 cup brown rice flour
1/4 cup buckwheat flour
1/4 cup amaranth flour
1 cup dairy free milk (or juice if you want it sweeter)
2 Tablespoons Lemon juice or apple cider vinegar
3 Tbls ground chia or flax seeds
(depending on how you measured your flours, this might be too dry to mix. If this happens, you can add the cup of date paste from below)
The following day combine the following with the soaked flours
1/4 tsp salt
1 tsp Baking Powder
1 tsp Baking Soda
3/4 cup raisins
3/4 cup walnuts

The baking time depends on how liquidy you made your batter. Mine baked for 25 minutes on 350 degrees. Makes 12 muffins.
