Hemp, Hemp, Hooray!

I LOVE HEMP SEEDS! They have such a rich, delicious flavor and are filled with health benefits. Hemp seeds contain all 10 essential amino acids and just 3 Tablespoons have 11 grams of protein! Hemp seeds contain an extremely beneficial type of omega-6 fat called GLA (gamma linolenic acid), which produces important anti-inflammatory hormones. Hemp seeds are one of the only edible food source of GLA (the rest your body has to convert from other fats). Here is a shortened list of the health benefits of hemp seeds:
  • supports a healthy metabolism and promotes fat burning 
  • alleviates PMS 
  • great for healthy hair, nail, and skin 
  • anti-inflammatory (helping with symptoms of asthma, arthritis, etc)
  • lowers bad LDL cholesterol
  • rich in disease-fighting phytonutrients and anti-aging antioxidants (like vitamin E)
  • rich in minerals including zinc, calcium, phosphorous, magnesium, and iron.


Hemp Sesame Seed Balls
1/4 cup sesame seeds (4 Tablespoons tahini)
1/2 cups hemp seeds (or 1/3 cup hemp seed butter)
2 Tablespoons raw cacao powder
2 Tablespoons agave (or honey)

4 dates
1/8 teaspoon vanilla extract
1/8 teaspoon almond extract
1 teaspoon cinnamon



Optional Decoration:
Almonds and shelled hemp seeds

Makes about 16 seed balls

Step 1: Place hemp seeds and sesame seeds in blender or food processor and blend until the seeds are finely ground. 

(If using tahini and hemp seed butter, skip step 1)


Step 2:  Add the rest of the ingredients and blend until smooth. You can add a little more cacao powder or ground seeds if it seems too sticky. 

Step 3: Roll into about 16 balls.

Step 4: Roll each ball in shelled hemp seeds or sesame seeds (I didn't have a lot so I just sprinkled them on top instead of coating the balls).

Step 5: Press one almond onto each ball.

Raw Almond Saffron Truffles

These are great to bring to parties or as a little portable delicious snack! I got a bunch of saffron in Thailand because it was so cheap so I am experimenting with a few different ways to use it. I think almond goes really well with it! These are really simple because you just puree everything together. I hope you like them! 


Raw Almond Saffron Truffles About 15 Truffles
1 cup dates
1 cup almonds (Soaking benefits and instructions here)
1/4 cup raw cacao powder
1 teaspoon vanilla extract
1 teaspoon almond extract
½ teaspoon pink sea salt

1/8 teaspoon saffron threads
 
1) Blend all of the ingredients in a food processor until it forms a crumbly paste. If it's too thick, add a little water, but only enough for it to just come together. You can make it completely smooth or a little chunky depending on what you prefer.
2) With your hands, roll the truffle mixture into balls (about 1 tablespoon). If the truffle mixture is too sticky at this point, place it in the freezer for about 30 minutes so it firms up slightly. 
3) Sprinkle or roll the truffles in a little cacoa powder and saffron.

You can eat them right away, but I think they are even better when cold. You can put them in the freezer and allow them to harden for an hour. I stored the remaining truffles in the freezer and allowed them to soften at room temperature about 10 minutes before serving. You can also just keep them in the fridge.

Creamy Persimmon Blueberry Swirl Soup with Coconut Kefir

There are lots of persimmon trees on random streets and trails around the island. Most of the time the birds eat the sweet fruit or it drops to the ground for the bugs to feast on. The fruit is usually too high for me to pick, but I try my best to reach the ones of the lower branches. Persimmons are incredible!!! They are really sweet so I like to enjoy them with something creamy or tart (like nuts or kefir)
I know it's November, but I don't have control over the heat in my room so it feels as hot as summer. Today I felt like something fruity and cold so this is what I came up with. Very refreshing!!!

Creamy Persimmon Blueberry Swirl Soup with Coconut Cream

Blueberry Brazil Nut Swirl
2 cups of blueberries
¼  cup brazil nuts
½ cup pitted dates
½ cup orange juice
Blend all ingredients in a blender or food processor until smooth.

Creamy Persimmon Cashew Swirl
4 large persimmons
1 cup soaked cashews
1/4 cup water
½ teaspoon cinnamon
Blend all ingredients in a blender or food processor until creamy.

Pour the two different soups into a soup bowl at the same time to create a swirl of blue and orange. I added some coconut kefir (recipe below) on the top to add a tart flavor and then sprinkled some chopped almonds and blueberries. Mmmm...delicious and nutritious. 

Coconut kefir
1 cup coconut milk
2 teaspoon kefir grains

Stir in a far or cup covered with a towel and let it sit for 12 to 24 hours. When it reaches the perfect amount of tartness that you enjoy, strain out the kefir grains.
